Ok, quick answer for you would be NO, it is not possible to make your keyboard work as a step sequencer so that solves that for you. For a start, it would be very limited in function with just 2 rows of pads. If it was easy to do, it would have been done.

Set up the instrument on one track, change the monitor state to "in", then assign the output of the separate tracks with the MIDI info to the track with the instrument. If you then select clips on the separate tracks you can edit them all at once. Wont work how you are thinking with a drum rack :( ...

The trial version of Live I believe is the full Suite version so there will be content that is not available in the Standard version. I guess if you are able to actually open the project you would need to remove the offending devices that are not available then replace them with something similar yo...

Use the cmd+1/2 to change the grid size.
You could also cmd+d to duplicate your last note and then use your mouse/arrow keys to move it where you want.

Also, if you hold CTRL(cmd) then grab a note with the mouse and drag it will make a copy of the note same as CTRL(cmd) + D for duplicate.

I think the main reason files aren't deleted is for safety... It is far better to have a few files build up and take up a small amount of space that you don't need than forget to save a session and lose an entire recording session.
