The Sonic Academy videos are pretty good. I used the one month free that came with my live 8 upgrade and they helped a lot. Very slow, clear, step by step presentation. My only gripes are that they are expensive and most of them are done in Live 6 (which isnt very helpful when it comes to the dj'ing...

Midi is simply control data. It contains no sound. In order to record the sound of your keyboards and not just use them as controllers, you need to connect their audio outs to your Echo's audio ins.
