The Info is not linear.
For some devices (the newer ones), the Info view explains every parameter and for others not.

Comping is well known in this forum.
A search founds 526 matches.
Comping is a recording features every DAW has: Cubase, DP, Sonar, Logic, ProTool, Propellerhead Record. But not Ableton.

I like to tweak the sound while playing.

So I like to play e.g. the Poly Evolver from Dave Smith.
Or the Waldorf Q+
(Almost every parameter has its own knob)
Really beautiful toys.
But its a matter of taste.
