You can copy in whichever native preset you'd like. I personally like to make my own and not have things cluttered by adding in all of Ableton's native presets, but you could just copy those over if you'd like that. But you can copy multiple presets at the same time, so it's not a one by one effort.

Yes, that would be totally fine. You could also leave it stereo and pan it, but you are the judge of what sounds best. There is no right or wrong.
