There's a free VST called Voxengo Span that is amazing. I find it better than Live's built in spectrum. It can do exactly what you want it to. there's no need to do all that things, unless You really want to have a extremely accurate attack, which is not that good idea. For the next project find a way to record with less noise? Are you using a high quality audio interface? microphone? pre-amp? If you have good equipment in a quiet room, it should be easy to work around without the noise being noticeable.

If you run a stability test program (google prime 95) does it find errors? If it does than it's your hardware. If not, then you'll know it's a software problem. Do you have anything more to narrow down your issue? When does it happen specifically?
