I've been enjoying some songs off of Dylan's latest, Modern Times. Notably "Spirit on the Water" and "Thunder on the Mountain"

There's many ways to skin this cat, but I would consider doing something that'll give you a unique, one of a kind sample set. There's already a lot of great sampled piano instruments out there.

I would have to say, in any slow tune, country or not, that has a pedal steel flowing over the top. The sound of angels I tell ya!
