I believe what you describe is normal behavior. Are you concerned about the noise? You can use Intel Power Gadget to monitor your CPU use and CPU temperature. I believe you can setup different sample triggers in the Zone tab in Sampler.

there's so many reasons this might be occurring.

Is Delay compensation on?
buffer size?
Is there latency in other DAWs?
Does it occur in an empty session?

Core Audio is the name of the audio architecture in macOS. It is the only audio driver.

Did you check Delay Compensation? It should be off. Options > Delay Compensation
Did you try making the buffer size smaller?
Is there any pattern as to when the latency gets better or worse?

Where is the mix being published? unless the volumes are really all over the place I wouldn't sweat it. If you're mixing with commercially released music these are already mastered. If the volumes are all over the place, really the best solution is to automate the volume of the mix so it's more cons...

if I understand well the scenario you describe,

if you want to only use one instance of the plugin,

you could put the note that selects the correct strumming pattern in each midi clip and this would change the strumming pattern when the midi clip is launched. no?
