OP, you can assign any knob to any parameter you want that is midi assignable. This functionality is there out of the box. There's no "8 knob limitation" if I understand what you mean, any knob can be assigned to any control. Enjoy!

You can drag and drop video files into Ableton like any other file and have it output in the video window.

The main factors that affect latency are buffer size, sample rate, and plugins that introduce their own latency.
Recording multiple channels at a time and only a few shouldn't affect latency.
I recommend getting a single 8 channel interface for your needs.

You are probably not clicking fast enough so it interprets that as another click in the same place. It thinks you're holding down the cursor so it plays again at that point after 1 bar elapses.
