I've been very happy with the platinum orchestra. It sounds real (provided you use the samples tastefully).
I've actually used live to compose large orchestral pieces.
The only probs I have is that live only allows me to access 16 channels of the kontakt plugin which drives the samples.

Confused about track delay functionality
OK.
I've been using live for a while now but just started trying to use track delays yesterday.
I have a few midi tracks I'm attempting to delay by 90ms or so (I do all my work in arrangement view).
Sometimes when I punch in the delay value, the little arrow to the right of the value turns red ...

try increasing the size of your audio buffers under
prefs/latency/buffersize
turning off dual cpu support.
also it might be a problem with your audio interface using a bus that is being shared by other periferals.

Use midi-rack chain selectors to rout midi data directly to different midi channels of a plug-in.
Note that this solves the current problem of being unable to confine a multi-channel midi performance to one track.
For example:

Had exact same noob problem and this was the mistake.
