Why do you want to normalize, you don't need to for what you want to do?
At the moment and in the near foreseeable future, I only use Ableton to record and edit solo classical guitar. I close mic and I intentionally keep the gains down a bit because I go from soft fingerpicking to loud strumming ...

I am at fault at this as we've gotten far off the original topic. The point is if you have the same source recorded on 2 separate tracks you cannot group and edit them together.

Quite simply, it sounds more like the way that I hear myself.
what kind of stereo micing techniques are you using? Most techniques have both the left and right channels with equal levels.

If you're processing the left and right channels differently then you're going to have a very messed up stereo image.
The only manipulation I'm doing is with the gains to balance it out, and it's usually only a db or 2. It's not unheard of to vary the reverb a bit from left to right, but I ...

I don't understand how panning 2 tracks hard left and right would sound better than a single stereo track. They are identical. I think you're setting something wrong on your interface.

Although I've found Ableton's reverb to sound ok for more unique reverb sounds I found it far from realistic and would rather use third party plugins, but to each their own.

If you're not interested in playing live with a laptop I'd actually recommend Reaper. I'm currently learning it as I'm interested in being an engineer/producer for rock bands, solo artists, etc. It's only $60 (unless you make over $20,000/year from music) but the features on it actually are above a ...
