Music theory isn't necessary for making any kind of music. Lots of great musicians play by ear and make beautiful music. It does come in handy however if you know it. Some interfaces have a basic effects set to direct monitor like explained above. So you will have reverb, eq, compression etc, all done on the interface with little/no latency.
Presonus and Focusrite are two makers that have this, I am sure there are others.

I am pretty sure that is exactly the same as the trackpad on the Macbook Pro's, and if it is, it works well for me.
