You can select on record = "arm" a few tracks simultaneously with shift on keyboard. Sorry if my suggestions are stupid.

I'm not sure, if I got it right, but I think you can do it if you select "1/4" value in "Quantization menu" in top left corner, instead of default "1 Bar".

I think it was ahead of time actually. When everyone was sceomorphic, Ableton was already flat and vivid 10 years before Windows 8 and iOS 7 appeared on a stage.
