I usually create a new track when I need room for saving takes. Grouping the tracks with "inactive" clips helps to keep the clutter to a minimum. I've also experimented with saving takes in Session View. Basically, just click and hold the clips when you tab away from arrangement view and place them ...

Yeah, I bet that gets old. Are all of your stems already set to the same BPM? If so, set Ableton to the desired BPM and turn off auto-warping. Then try it. Of course, that won't help with stem start positions if they are all different. Great input, perhaps I should turn off auto-warping when I work...
