I'm in the same boat.
Following for more updates.

I'm experiencing the same.

UI gives me beach ball ~5 seconds on copy and paste/ move and even slower at saving.

I'm using an eGpu on a '18 Mac mini in about 50% cpu meter.

This for solved for me by turning OFF Adaptive mode in RX8.
(Uncheck it)
Seems that if you have a plug-in, any plug-in, that is in an Adaptive or Learn mode - that "mode" needs to be shut off.

Same problem with Izotope RX8. If using de-noise the undo will only show "Undo Threshold 6". This would be easier to work around with an "undo list" like you would find on some other DAWs so you could just select an undo item from the list of events. Ableton must be aware of this...
