Yeah it's a known fact Live uses the GPU for UI on PC & MAC since 10.

A lesser known fact is that on PC, it's been a mess.

And it's been a mess as well on MAC, but to a much lesser extent.
Yet still, UI lags were reported on both platforms.

Until 11.2 completelly fixed it for MAC users!

I had this same issue, I'm running an M1 MacBook Pro and opening 11.2.5 in Rosetta mode seems to have solved the issue, for now at least.

On mac: shut down Ableton > go to: MacintoshHD/Applications/Ableton Live 11 > right click the application icon > click 'get info' > check the 'Open using Rosetta ...
