I'm using a Firestudio 26x26 with e-drums on a PC and I have no appreciable issues with latency. I realize that's different, but there are obviously people looping with version 7. It might help to post your Live audio settings.

Regarding the point that you need real hi-hats to sound like real hi-hats: I've played e-drums and acoustics for thirty years so I can back you up on that. I bought one new when they came out for about $300. It's ok for what it is and when it was introduced, but you'd be much better off putting that money into something new and sturdier. All other things being equal, it's 25-year-old gear that can fail on you.

It's not the pattern, right? It's the sounds and how they're made. I'm sure it's a combination of edge and top hits on a closed hat. Maybe I should mention I've been paid to play hi-hat's?

It sounds like a combination of top hits and edge hits. The chunky sounds are the edge hits. They sound like standard, medium or medium-thin hats to me.
