TouchDAW is more like a out-of-the-box template that offers a mixer and some extras for different DAWs. From what I understand (haven't tested it) it offers more options to connect, but as you wish to connect via WiFi this is no advantage. TouchOSC is much more flexible and also very nice to use it ...

In case your synth doesn't understand aftertouch, try midiConverter3

You said when selecting mp3 export the rendered WAV was crappy, too. If it was only the mp3, I'd say maybe some problem with a mp3 library that Live installs or something. But this sounds more like a bug to me as soon as you select mp3 export. You should consider informing support about the problem ...

Ok, so at this stage you are able to produce a proper WAV file and convert it to a proper mp3 file outside of Live if needed?
So at least you are able to work now and should contact Ableton support about the not working mp3 export.

No, but why is it even an issue? When you name the return track, it always has the A, B, C... letter first, so it's pretty easy to see where things are being sent. Also, how would you fit full return names under those knobs? Actually often you have the return channels hidden. Then you are left with...
