Tom Cosm's video is great, seems so obvious :)
There is a nice big space on the right of session view that would fit 6 more tracks in. Perfect to drag in another tune's 6-tracks from the browser for mixing together!
It's a shame there is no 'magic button' as it seems like it would take an hour or ...

You need to use the instrument rack to split a keyboard across two instruments. insert a blank instrument rack and drag both VSTis into it. then you expand the instrument rack down the bottom and open the 'key' section. you can then reduce the range for which each VSTi is triggered (the default is ...

I can't check the youtube video at work but a couple of suggestions are to use the resonator to pull out certain notes/frequencies, and if possible get a top quality piano instrument.
