Don't know about MAX (because I have no money) but with PD you could start out using the built in objects and then move on to creating your own add ons using C++.

Also because it's open source you can learn a hell of a lot from studying the source code.

I aggree with Rozling, this place is now a troll magnet. Not only that but the filth, vitriol and general infantile behaviour of some posters actually drives away people who could otherwise make a make a useful contribution. Also there are a few ultra arrogant know-it-alls who can't resist pouncing ...

Synthogy's Ivory Piano sounds wonderful, but you will need a fast machine with at least 2 GB ram and 40GB free space on a fast disk drive to get maximum use from it. Also comes with a stand alone program for when you just want to bash around on piano without all the overhead of host sequencer. edit:...

If you are considering MAX/MSP you should also consider the open source Pure Data which is written by Miller Pucket who also developed the original version of MAX http://puredata.info/

This is how I set up my sample tank for multi part working.

I'd love to be able to reduce this to an instrument rack, but you can't because they don't support multiple input vsts - which is pathetic (Abes - please fix this!!!).
