Yeah basically you only wet play if your trying to digitize a single copy and want it as pristine as possible. Unfortunately after that the record is pretty much shot. Never done it myself as I like my noisy dirty vinyl but thats not what some people are into I guess.

Sure, but that does not turn an unbalanced signal into a balanced signal. You're simply using an XLR output jack to carry an unbalanced signal. In a live setting, especially where your running over 20' you need balanced cables in order to prevent signal degradation and picking up any machine noise....
