Lots of synths allow you to specify the midi control that gets used, with mod wheel just the default. If yours doesn't and you have Max 4 Live there's an 'Expression Control' that might allow you to use aftertouch.

one thing that i find myself doing is using button aftertouch instead of the strip, it feels very natural

I did work this problem out in the end, apologies for not updating this. I was still in contact with Abelton support on some issues. The problem was that I didn't run Ableton as Administrator, the demo version of jBridge doesn't warn you.
So that's all working now and I have all the VST I ...
