A Drum Rack can always be unfolded in the Ableton mixer - all the filled cells will show up as individual channels. Any controller that can address individual channels should work.

If you are wanting to export a track or mix that has delay or a reverb tail hanging over the end, just select a few extra bars to export. So, if your song is 64 bars long, select 65 or 66 bars before exporting in order to capture the hanging-over audio.

Have you looked into ClyphX? If you are on Mac OSX and using the CoreAudio driver, you can create what's called an "aggregate device" which will combine your interface with the built-in output. Then you can just send your click to only the built-in headphone jack.
