A Drum Rack can always be unfolded in the Ableton mixer - all the filled cells will show up as individual channels. Any controller that can address individual channels should work.

If you are wanting to export a track or mix that has delay or a reverb tail hanging over the end, just select a few extra bars to export. So, if your song is 64 bars long, select 65 or 66 bars before exporting in order to capture the hanging-over audio.

If you are on Mac OSX and using the CoreAudio driver, you can create what's called an "aggregate device" which will combine your interface with the built-in output. Then you can just send your click to only the built-in headphone jack.
