What 3dot said. If you go to audio preferences and set your buffer depth, then the input and output latencies will be reported to you. Can't you do that with Live? I don't see the phone has anything to do with Live vs Studio One. You have a vocal melody on Soundcloud. You can import that into Live and create the Midi from it with Melodyne. I don't see the difference. Of course you can do it with Live and Melodyne. And it will work...

when I do stuff like this, I insert a M4L device that converts sustain pedal (CC64) messages into note duration, i.e., longer notes rather than a CC message. When you play a sound live (from a keyboard), there's often too much dynamic range if you have vel>vol set to 100%. That is, the softest notes are too soft in relation to the loudest. Think of vel>vol as a kind of compressor that is triggered by velocity.
