are you sure you don't have key or velocity mapping turned on or routed to rate in the MIDI expansion window (upper right of device)?

The easiest key-control parameter to understand is Keytrack > Rate. This means that the higher you play on the keyboard, the faster the LFO rate will be. The lower you play, the slower. There are quirks for sure, especially after crashes, but yeah for the most part mine usually init properly. I do have a case that's been bugging me with a numbox that is initially hidden, and made to bang it's value on hidden 0 - for some reason it always comes up as 1 instead of 100.

It's not just good for sample libraries (coming from someone who does not use samples other than his own recordings), but for sound design. There is no easy way. You basically at this point in time cannot do what you want while meeting all the criteria you mentioned. If you want to do live (meaning LIVE - as in every parameter at your finger tips and the ability to go somewhere new every time) then you'll need processing, jitter, vvvv, ...
