I'd use the Total (or was it "Virtual") Control VST for this task.
Play the sounds you want to sample and record them on an audio track with Live. This way you're going to sample it over USB.

Just keep in mind that "freeze" and "render to disk" won't work.

I use a Terratec Phase 26 audio interface with Live 8. Live allows me to configure the outputs 1/2 as a stereo pair or separately as two mono outputs. HiEnergy, the Phase 26 doesn't seem to have ASIO driver, right? How's the latency with MIDI Keyboard and Live? The Phase 26 has an ASIO driver. There's even a switch on the front panel for turning ASIO on and off. It's the button to the right of the "COAX OUT" SP/DIF connector. http://images6.thoma...

I use a field recorder attached to the SP/DIF out of my sound card for recording my live session to a wave file stored on a CF card. The former "sound card" I used for recording was an Access Virus TI Desktop, the field recorder is an M-Audio Microtrack II. Did not yet test this with my current soun...

What about using iTunes visualization mode or a second computer running Winamp or similar doing some visuals? With that you just hook the second machine up to the beamer and off you go.
