In my humble opinion, I would say that Native Instruments have the best sounding plugins. The previously recommended Loopmasters is an ok sample library & I've gotten some sounds from there, but I think it's a limited option as you should really get into creating your own sounds & out of every pack ...

I would think the easiest way for this would be to use a reverb plugin that uses impulse responses. The Convolution device in M4L does this. There is also the Reflector plugin from Native Instruments.

Best way is either to learn the instruments or find someone that will play the parts for money or sex.

Otherwise go crazy trying to make something fake sound natural & not succeed. Guitar has too many nuances.

Avoid the Motu Ultralite MK3 (unless you want to buy the one I'm trying to sell). I just got a Focusrite Scarlette & like it very much.

I've been using Sony MDR-7506 headphones for about a decade now & I love them. They are around $100. There might be better ones out there, but the important thing is to learn how they are supposed to sound. Whatever you get, be sure to listen to the music that is closest to the sound you are working...

I've been using the USB on my Mac. Maybe I should try with the Firewire, but I always thought these were supposed to work really stable with Macs regardless.
