I thought he would tap for a bit to get the right tempo and then leave the metronome playing to keep in time. Just a guess.

I'm no great expert or anything but I am guessing that you are talking about an acoustic guitar recorded through a microphone. The metronome sound is coming out of your speakers to give you the timing but it also gets recorded through the microphone. Is that it? If so, I have dealt with this problem...

I can see how your experiment would allow rhythmic interest but I can't see how the music would "go anywhere". Melody and chord progressions tell stories that can have beginnings Middles and ends. A tune consisting of a single note would be monotonous.
