There is no one click "+" in MBP. At least in my language.
+ is "shift+4".
Left to "-", there is "*"

I basically rack vsts and use chain selector (without external instrument track). But like this you cant play 2 instruments at the same time. If they are needed to play at the same time you need to put them on separate channels. If you are using same vst-different parameters you can use Program Chan...

Your issue is about CPU, not ram. What is your buffer size? If you are extremely low on buffer (like 32 or 64) glitches are (may be) normal.
