If you loop a middle section it will sometimes turn out OK. You should make sure the loop points are at zero crossings at the same point in the wave's cycle and at pretty much the same amplitude or it will pop or click each loop. Arrange for arranging, session for performing. What I like about arrange is that it is fast. Logic or Sonar have more MIDI capabilities but I think Ableton's workflow is faster than either (haven't really used Cubase so can't comment). Pres on "sel" at the top, to the right of "key" and "vel". You will see a zone selector, like key zones, but MIDI mappable to whatever control you like. You can set up your zones and map them however you want.

You need to adjust velocity sensitivity in the simplers in the drum rack. By default they are on 0.

You can adjust one then map value to siblings if you want them all to be equally velocity sensitive.
