could be anything from a plugin not authorised or in demo mode, incorrect audio interface settings, incorrect buffer size and settings, maybe even a hard drive not fast enough at streaming data/samples.

You need to set that folder in Ableton preferences and scan it, should then show up in your plugins list in Abletons browser.

For me synth based is Xhuns Little One..

My m1 mini shows only 2% idle, maybe you have other apps running as well. Or plugin causing that

In my experience, white/blank plugin GUI's is memory related. For some reason your system is out of available allocated memory to be able to display the graphics. This is where I would troubleshoot. Use VST3, no need to rack, save, and put them into your VST3 system preset folder - show up in push too.

Not seeing these issues on my new M1 Mac Mini.

I just installed the Focusrite Control 3.7.2 software, which is M1 ready uses Coreaudio, as my first Mac I got the 8GB model but with 512 storage. runs really well.
