Do you use the onboard audio device of your computer? In my experience on win 10 the onboard audio connectors (analog) are only active when a jack is plugged in. This is unusual for me, because analog in/out should be always active, like in a mixer or amp right? Why should the OS switch it on/off? ...

You have probably set a default MIDI track with a Kontakt instrument on it at some stage.
Just create a MIDI track, delete all the devices from it then right-click the track header name and select "Save as Default" which will now reset it to be a blank track
