I like the Ableton website because it is nice and clear since lacks all nonsense that is put on more 'modern' websites. If you own Absynth there are some interesting resonator effects some of which sound a bit like drone strings. Just been having a play.

there is no polyphonics(chords) in any realtime audio>>midi scheme AFAIK..
I thought that a lot of sitar playing was melodic up and down one string with big bends. So monophonic should be OK

I thought of another way to do this but you would need a pitch to midi connverter. Set up an audio track and a midi track. Process your straight guitar sound through the audio track. On the midi track set up scale device > a sampler. Cinfigure the scale device so that only the notes you want to repr...

I just watched the Bitwig beta video. The first thing I though is that someone has got Live, changed the colours and moved the stuff that was on the left to the right.
