If you write music that you want other people to play, being able to notate it as sheet music is often the easiest and most direct way to convey that information to other players.

I'm not sure about the Zoom recorders, but I have a Tascam DR-40, which does 4-track recording. I'm pretty sure you could load a 2-track mix and then record a vocal track against it. If you're only using two outputs, and don't need the multiple ins and outs of the NI Audio 8, then the only real benefit would be if the D/A converters in the NI box are better than those in your MBP.
