I think there's a way to do it where you take a track and line it up with it's own instrumental (assuming you have that) and then phase flip one of them and it produces a passable acapella some of the time.

also, I use live 6 with the MPD and it's fine. 7 has more features which may or may not be "required", but 6 certainly gives me no grief.

I think the thing to do is ultimately practice enough to not require 32nd note quantizing. I suspect that if you can't play a 32nd note pattern with fairly close precision already, the quantize is going to cause more harm than good, putting notes on the wrong 32nd. It sounds like you need to be running live, not an MPC, and especially not the 5000. recording loops and playing them live is not really what the MPC is all about, nor does it do anything you described very well.
