There is an Ableton Midi effect called random that does just this for you. Drop it onto your midi track and turn the Chance control to 100% and the choices control up to the range of notes your would like to here ie 24 will give you a range of 2 octaves.

It only works with midi clips as you can record any midi information (note, cc etc). It is not possible to record automation in the clip view for audio clips as mentioned by the other guys.
