Surely people should be able to use their CPU as they see fit??
As you say a warning may be a good idea to give newbies a heads up, but removing the option altogether suggests that they think that their paying customers are too stupid to use this feature wisely.

I've also been getting a ton of 'Out of Memory' errors in the past few weeks (I have been sending the bug reports off to bugs@ableton). The lack of stability in this version of live is really starting to hamper my workflow :-( I also have a big set but have been trying various things to optimise it....
