Here's a tutorial on using EQ8 and Utitlity devices to build a three-band crossover that you should be able to extend to more bands.

It's got nothing to do with the Launchpad. Look around in the preference for Select on Launch in the Launch preferences and turn it off.

Try playing around with the release on your compressor. If the release is letting go while there is sound playing such that when it does it's not loud enough to immediately re-engage the compressor it can create a sort of slap back sound when the volume suddenly pumps back up that could be what you'...

Double clicking a plugin from the browser is how you add it to a track, the plugin's window opening is a secondary effect of doing that. Once the plugin is on a track the proper way to open it's window is via the wrench button at the top of the plugin device on the track's Detail View.
