All I can think of is to search for tutorials that are for Live 9 or 10 only, because those versions use Max 7 and Max 8 respectively, which both have the "new" Max look (it changed with Max 7).

Eventually, yes, but the version of Max 8 bundled with Live 10 is still the pre-release version. Unless you own Max 8 standalone you’ll have to wait until they release an update to Live that includes the release build.
