Check that the drive location where the projects are located is accessible in your OS. Try and browse to that location in your OS. If the folder has moved, or the path been renamed, then Live won't find the sets.

I always hate when people do this but ...
My L11 on PC (win10) loads my default set in under 5 seconds.
No plugins though, just a few native devices on 8 channels, 2 returns.

You can automate the master volume fader, though what I usually do is plonk a Utility on that master channel and fade that.
