Near the main play/stop/record button there is a drop down menu. Select "record for x bars". That would do it.
I don't know if you can switch between those settings once you lay down your first loop but you can find a workaround using racks with a looper on each chain.

I meant switching a lot between scenes (or banks) on the actual PK - Whoops. I can see how that would be confusing. You can see he is holding the "scene" button quite often.

I don't quite understand what he's doing with the padkontrol to achieve his drum sounds. Seems like a lot of switching between scenes. Can anyone shed some light on this?
