DubFX is really sick. If you're into this kinda thing, then you should definitely check out Beardyman as well. He does a similar thing, but using Kaoss pads (4 of them actually).

You should just watch that video above. It's an hour long show that he did, and it's really great. He's on tour right now as well, so check to see if he's coming to your area. I saw him in Victoria last week, and it was one of the best shows I've been to in a long time. In part of his set he 'played/created' 20-30 mins of Drum and Bass, that was honestly, some of the best I've ever heard. Just incredible.
