Can I turn off velocity sensitivity on a MIDI keyboard?

Is there some place I can turn off the velocity sensitivity in Ableton?

I have just bought Akai LPK25, and I would like to have the option to turn off the velocity sensitivity when I record.

You have several options.
On some devices like Simpler, you'll find various velocity number boxes. When set to 0%, velocity will have no effect.

There is an easier way using the Velocity MIDI Effect. Set its mode to "Fixed" and choose the velocity you want all notes to play at.

Yeah velocity midi effect is probably what your looking for

With velocity effect you can also retain some expression while removing peaks by adjusting Out Hi and Out Low values.

It's a MIDI effect (in the suitably named category in the browser). Should be a Velocity effect that you can place before your instrument in the rack which intercepts the MIDI from your keyboard and sends whatever you set it to send. There should be presets to quickly Fix to a velocity.

What keyboard are you using?

Take a look at the user manual. Most allow you to choose different velocity curves and often fixed velocity is an option. That's a lot simpler than putting a Velocity plugin on every track.

From the Launchkey manual, pg. 15:
Velocity Curves
To suit different keyboard playing styles, Launchkey lets you select the relationship between key velocity (i.e., how hard you hit the keys) and volume. The relationship is called the velocity curve, and the default curve is NORMAL, which will be satisfactory for a great number of players. Three alternative velocity curves are available – Low, High and Fixed

To select an alternative curve, press and hold the top InControl button and press one of the transport buttons as follows:

With the Fixed curve selected, velocity sensing is disabled, and all notes will be at maximum volume regardless of how hard the key is struck. With the Low curve selected, the volume of the notes will be lower compared to the Normal curve for the same style of playing. The High curve has the opposite effect.
Note: Velocity curves only affect the response of the keys, not the drum pads.
That's two button presses to switch velocity on and off. Simple.
