ipad apps - what are you using?
i just picked up my first ipad (2) and am overwhelmed by all the apps out there. im not interested in making complete tracks on the ipad; sketches and sounds etc. mostly in a non-techno vein. for controllers i think konkreet looks good, but it looks some touchable offers alot now too..
controllers: Touchable / Konkreet Performer / Grid ?
drum machines: Electribe / Molten / iMS 20 ?
sequencers: garageband / ?
any good apps to record audio internally (from other synth / noisemaker apps)?

Nanostudio is a great DAW. There isn't an iPad version yet but just get the iPhone version and 2X it.
Beatmaker 2 also great.

TouchAble and Garageband are mandatory.
Maybe touchOSC too if you fancy it.

I want to check out some apps, but nobody seems to offer demoversions anymore...
Do you know of any good audio-apps that can be downloaded as a free demo (maybe like NIs 30 minutes demomode)?

Touchable is awesome. GarageBand is a game changer - I'm selling my laptop as I prefer using GarageBand for sketching songs on the road. You need a friend with GarageBand for the mac and logic for the mac to get all the midi and audio data out though. Soundprism is really cool too.

Yeah I checked soundprism as well on my Ipod... really nice, I was surprised it hasn't been mentioned before. I will check out those you mentioned... anything else demoable?

polychord. really fun yet still completely useful. unless you don't care to work with chord progressions in which case it's probably not much use.
and nanostudio is imho the best all-in-one app, despite it being an iphone app. it looks just fine 2x'ed on the ipad.

Iirc I saw a video about an app that lets you draw automation lines/clip envelopes by hand instead of using the mouse, but I don't remember the name anymore....
Does that ring a bell?

touchable, midi touch, polychord, step-poly-arp
havent used step poly arp for more than 2 minutes yet.
soundsource wise, i-electribe, rebirth, animoog.
i much prefer the midi controlers than sound sources.
miditouch is my favourite.
