do you need to jailbreak ipad2 to connect touchable to alesis dock with usb?

L8 full support. You won't be able to use L9 features ( recording automation...) and browser though.

Could someone explain ad hoc network?

Does that mean that I need to be connected to a wireless network?

If thats the case then I don't see how I can use it live. Most places I play do not have open wi-fi networks.

adhoc is a private network connection, between your computer and your iPad, if your computer has wifi on board, you don't need anything else.
