There are cheap microchips with usb-connector called teensy.
They are able to be recognized as a USB-MIDI-device... you program them as an arduino.
It's simple. just connect the sensors and read the analog data, then sent a midi-message.
I considered selling modified guitars, but I'm not much of an craftsman.
