Re Record function

Is there a way to re record in arrangement view? IE hit record again to restart a take vs stop - undo - record?

The way you state is how it is done, just undo and re-record which is simple enough as is or just make a simple macro keyboard key to do it in a single press if you like

protip: be as bad at getting it right in one take as I am. you’ll have record, undo, re-record down in muscle memory pronto. 😆

If you right-click the Arrangement Record button, you get an option to start the playback when the rec button is triggered.
Then hit F9 to start recording; hit space to stop the recording; hit F9 to record again and so on...
You don't need to undo (for midi you'd need to turn off Overdub though)

You can also set a loop around the region you need to record and let the recording goes until your take is good.
