Mac OS High Sierra vs Latest Big Sur? 10 vs 11?

Just moving over to a MacBook Pro 13” i7 that’s on Big Sur. I was using live 10 on High Sierra so a small jump up to Big Sur and possibly upgrade to Live 11.
What’s it like?
Or is it better to stay on v10 or roll back Mac OS to Catalina?
What are peoples thoughts on the benefits of Live 11 and Big Sur?
