I've figured out how to record using an ME-80 into the laptop, but when playing back, I have to switch from the configuration in Ableton from the output: ME-80 to output: Realtek. Any way to avoid switching back and forth in the output config panel?

"Output: ME-80" will output to ME-80, obviously, if you want to use it, connect headphones or speakers to the ME-80.
"Output: Realtek" will output to Realtek, which is the computer's audio chip (not the ME-80).

Yes, headphone jack into speakers...but when Ableton outputs back to the ME80 (or any FX pedal) does it require the ME80 to maintain the effects when recording, or are those incorporated into the Ableton file? I guess I can experiment, but I'm still just trying to get my connections working.
