Is it me or are they generally quite poor quality? Do any of you have a bread & butter method of 'tidying' them up?

which samples are you refering to?
Live's library or samples in general?
Live's library is pretty decent I think.. don't use them really..

you could do some EQ'ing to polish them..
just use EQ8 to give 'em more shine..
then maybe add some saturator/compressor..
