Is there a way to use Max For Live to create a UI for v 3rd party vst plugin? I want to be able to control its parameters with Ableton. Similar to mapped groups but with more complex/accurate UI.

Yes (for some instruments)
It can become pretty complex very quickly though depending on what you plan to do.
Max is capable of loading VST’s. If you use Max to load the VST you can create your own control setup for the plugin in Max. The one catch is that the controls must be visible to host automation.
